This is a recipe we use to make breakfast bars for our clients. We make everything fresh, onsite with the best ingredients and that’s why we use Wholesale Nuts and Dried Fruits. Our clients are homebound with various medical challenges and nutritious food is essential to their health and recovery. While we prepare and deliver nutritious meals for dinner, some of our clients are in need of additional protein so we began preparing a high protein breakfast meal. Ingredients
- 8 cups rolled oats
- 4 cups oat flour (can be purchased or made by processing a heaping cup of rolled oats in a food processor or blender)
- 4 cups dried blueberries
- 1 cup pumpkin seeds
- 6 tbs sesame seeds
- 3 tsp kosher sale
- 3 tsp cinnamon
- 4 cups orange juice
- 8 tbs honey
- 4 tbs coconut oil, melted (can sub for vegetable oil)
- 2 cups unsweetened applesauce
Instructions
Preheat oven to 375 F and prepare a 9 x 13 baking dish by lightly greasing.
In a large mixing bowl, stir together the rolled oats, oat flour, dried cranberries, pumpkin seeds, sesame seeds, salt, and cinnamon.
In a separate mixing bowl or measuring cup, mix the orange juice, honey, coconut oil, and applesauce.
Mix the liquid ingredients into the dry ingredients. Then spread the mix into the baking dish, and bake for 30 minutes.
Remove from oven and cut into bars, but keep the everything in the baking dish until completely cooled.
